Strawberry Baked Oatmeal Recipe

When you’re a busy mom, easy recipes are a must. This recipe does not disappoint. You can literally throw all of the ingredients in the baking pan, so clean up is super minimal. In just 35 minutes, you’ll have breakfast sorted for the week!
This recipe was found on kidfriendly.meals. I adapted it a bit to make it my own, but Min Kwon always has the best recipes for littles! Be sure to check her out.
Ingredients:
- 2 cups chopped strawberries
- 1 1/4 cup milk (any milk will do)
- 1 medium banana or 2 small finger bananas
- 2 cups oats (use rolled oats for best results)
- 2 tbsp chia seeds
- 1 tsp cinnamon or pumpkin pie spice
- 1 tsp vanilla extract
- 1/2 cup sliced strawberries for topping, can also use additional fruit such as blueberries
- 1/2 c chopped walnuts (optional)
- 2 scoops collagen powder (optional, but adds a great hit of protein)
Instructions:

- Preheat oven to 350 degrees F.
- Spray 8-inch baking dish with non-stick spray or coat dish with butter.
- Place chopped strawberries and milk into blender and blend until smooth.
- Smash banana in the dish. Add oats, chia seeds, cinnamon or pumpkin pie spice, vanilla, blended strawberry/milk, walnuts and collagen powder. Mix until combined.
- Top with sliced strawberries and any other fruit you desire.
- Bake until liquid is absorbed, about 30-35 minutes.
- Allow to cool. Please note the oatmeal bars will become more firm as they cool.
- Store in an air tight container in the fridge.
