I’m so excited to share three easy and delicious recipes for healthy grab and go snacks that you can batch prep on the weekend. With these nutritious granola bars, oatmeal cookies, and energy balls, you’ll have wholesome options ready to fuel your kids throughout the week. 1. Healthy Granola Bars

Ingredients:

  • 2 cups rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup dried fruit (raisins, cranberries, or chopped apricots)
  • 1/4 cup chopped nuts (almonds, walnuts, or pecans)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix the oats, mini chocolate chips, dried fruit, and chopped nuts.
  3. In a microwave-safe bowl, combine the almond butter (or peanut butter) and honey (or maple syrup). Microwave for about 30 seconds until the mixture is warm and pourable. Add the vanilla extract and a pinch of salt.
  4. Pour the wet mixture over the dry ingredients and stir until well combined.
  5. Press the mixture firmly into the prepared baking pan.
  6. Bake for 20-25 minutes until the edges are golden brown.
  7. Let cool completely in the pan before cutting into bars.

2. Healthy Oatmeal Cookies

Ingredients:

  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/3 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, combine the melted coconut oil, honey (or maple syrup), egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the raisins or chocolate chips if using.
  5. Scoop tablespoons of dough onto the prepared baking sheet and flatten slightly.
  6. Bake for 10-12 minutes until the edges are golden brown.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

3. Energy Balls

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup mini chocolate chips or dried fruit
  • 1/4 cup ground flaxseed
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, combine the oats, ground flaxseed, and mini chocolate chips (or dried fruit).
  2. Add the almond butter (or peanut butter), honey (or maple syrup), and vanilla extract to the bowl.
  3. Stir the mixture until well combined.
  4. Using your hands, roll the mixture into small balls (about 1 inch in diameter).
  5. Place the energy balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes before serving.
  7. Store in an airtight container in the refrigerator for up to a week.
