The battle of the greens. Most mamas can likely relate to this struggle. I sure can, so I came up with a breakfast smoothie popsicle recipe that packs greens and other veggies/fruits/goodness into my toddler’s tummy. He has zero clue about it! I know this recipe will be on repeat in your home!

Why So Picky???

Picky eating is a common stage in early childhood development. Studies suggest that it often peaks between the ages of 2 and 5. This behavior is thought to be rooted in a child’s natural defense mechanism. During this time, children are more cautious about trying new foods, particularly those with bitter tastes, like many greens and veggies. This is believed to be an evolutionary trait that protected early humans from consuming potentially harmful plants.
Children are also influenced by their developing taste buds. Young children have more taste buds than adults, making them more sensitive to certain flavors. This heightened sensitivity can make the slightly bitter taste of greens and veggies less appealing. Additionally, children’s preferences are often shaped by their parents’ eating habits, environment, and exposure to different foods.
Parental response plays a significant role in a child’s eating behavior. Positive reinforcement and repeated exposure to healthy foods can help children become more accepting of them over time. Research shows that children might need to try a new food 10 to 15 times before they start to enjoy it. Incorporating greens into fun, familiar foods, like smoothies, is an excellent strategy to encourage a balanced diet.
Behold: The Magical Breakfast Smoothie Popsicle

Everyone knows that smoothies are an incredible way to pack greens and other veggies into something delicious, but even a smoothie can be a no-go for some kids.
On the other hand, what child do you know that turns down popsicles?? Not many, I bet. It’s a no-brainer to turn a power packed smoothie into a breakfast smoothie popsicle.
Here’s what I do:
- Grab a blender. I swear by the Vitamix. It is pricey, for sure, but it makes smoothies so smooth. There is zero remnant of veggie bits. So smooth! You can most definitely use any brand of blender, but the Vitamix has given me the best results here.
- Choose your fruit. Make sure to include some powerful fruit flavors such as mango, pineapple, or some other punchy fruit as well as other standard fruits.
- Veggie time! I always use spinach as well as other low-flavor veggies such as cauliflower or zucchini.
- Greek yogurt is key! Greek yogurt will ensure everything mixes together easily and creates a very smooth texture.
- Amp it up! To add even more goodness, throw in some chia seeds, ground flax seeds, collagen powder, coconut oil, nut butter, etc.
- Don’t forget the honey!! Honey is key. I am heavy handed with the honey as it covers over any hint of veg taste.
- Use a cute mold. My son will eat just about anything if it’s in a cute shape such as a car, rocket, or dinosaur. Here are the exact molds I use.
My Exact Recipe

This is the exact breakfast smoothie popsicle recipe I throw together. I don’t measure anything. I simply throw everything in the blender and go to town. My son NEVER says no to these: breakfast, lunch, dinner, snacks.
The Magical Recipe:
- Plain, full fat Greek yogurt
- Frozen Acai smoothie pack (I use one half of a small pack and purchase them at Walmart)
- Frozen banana
- Frozen mango and pineapple
- Strawberries (I use fresh but frozen are ok)
- One scoop Vital Proteins Collagen
- 1 Tbsp chia seeds
- Fresh or frozen spinach
- Frozen riced cauliflower
- Generous amount of honey (I probably use 3-4 tbsp depending on how big the smoothie is)
- Adorable popsicle mold (I use this one)
Simply blend it all together and pour into the popsicle mold.
My son happens loves this as a pure smoothie, too, so I divide all remaining smoothie mix into small glass containers to freeze. If I plan to give him some smoothie in the morning, I simply pop one of the small frozen smoothie containers in the fridge the night before so it’s ready to go in the morning.
